Keto Italian Meatballs

Who doesn't miss bread when eating a low-carbohydrate or ketogenic diet. This recipe is perfect for those wanting to fill that need. There are so many options. It can be used to make anything as simple as a grilled cheese sandwich or substitute as a toasted bun for hamburger sliders or even spread some garlic butter on it and broil for some delicious garlic bread

1 lb Ground Beef

1 lb Sweet Italian Sausage

1/4 Cup Psyllium Husk

2 Large Eggs

1 tsp Kosher Salt

1 tsp Black Pepper

1/2 tsp Onion powder

1/2 tsp Garlic Powder

1 tsp Italian Seasoning


1.5 Tbl Olive or Avocado oil for searing in the skillet





 

Mix the Ground Beef and Italian Sausage together to get well incorporated. Next, add in the eggs and all the dry ingredients. Portion into 2oz meatballs. Sear the meatballs in a hot skillet with some olive oil or avocado oil. Transfer to a baking sheet and put into a preheated oven at 350F for 25 minutes or until internal temp reads 145F.


Transfer your meatballs into a pan of your marinara sauce of choice. I use RAO's and let simmer on low for 15 minutes. Dish up and sprinkle with Parmesan Cheese.
